Palm Beach Guacamole w/ Shrimp

Serves 4


2 avocados
1Tbsp lime juice
6-8 raw shrimp, peeled, deveined,1/4 cup red onion, finely chopped 1/4 cup fresh cilantro, chopped optional
2-3 tsp Florida Citrus Blend

In a small pot add 1 1/2 cups of water, 1/2 cup of vegetable oil and bring to simmer, add cleaned shrimp to water/oil boil and cook for 2-4 minutes or until the shrimp have turned pink.  Once shrimp is cooked, place on board and cut into small pieces. Let cool.  In a medium, mixing bowl, mashing the avocado with a fork, mix all ingredients together then add the shrimp giving a light stir.  Serve with tortilla chips.
