Ceviche

Serves 4

INGREDIENTS
diced -  1 pound fresh shrimp, cut into 3, 1 avocado, firm,  1/2 red onion, 1 cucumber, 3 cloves of garlic and 1 jalapeño, 4 limes squeezed, Cilantro, 1/4- 1/2 tbsp French Grey Organic Sea Salt, cracked pepper to desired taste and tortilla scoops optional   

First boil the shrimp until pink, drain, cool, then cut.  Place all ingredients in a large mixing bowl, Refrigerate for a hour. Serve with scoops.
