Aunt Twitty’s Watermelon Arugula Salad

Serves 4


Arugula, 2-3 cups watermelon, diced, 1-2 cups blue cheese crumbles, 1 cup red onion, slivers, 1/2 tbsp Simply Pink Himalayan Sea Salt, 1/2 cup EVOO, 4 tsp white balsamic 

In a large, mixing bowl, add arugula and onion, slivers, and set aside.  In a small, mixing bowl add 1/2 cup EVOO 1/2 teaspoon simply pink Himalayan sea salt and 4tsp white balsamic and whisk together.  Add EVOO mixture to arugula mixture and toss. Top with watermelon and blue cheese crumbles & mozzarella balls optional.
